Berry Cherry Cheezecake

A delicate salted cashew base with Blackberry and Cherry Cheesecake topped with raspberry coconut cream and fresh blueberries. Perfect for welcoming some warmer weather and those delicious summer berries.
Of course I couldn't decide on just one type of berry so I pretty much threw in any type that I could find, and well, no regrets! I made this cake as a gowing away cake for my lovely friend who is leaving Ireland to go and walk the 500 miles of el Camino in Spain. After all, she needs some fuel to get her going right?
This recipe would be great for a summer gathering, you can make it in advance and just pop it out of the freezer an hour before you wish to serve it.
I made this recipe using the Magimix 3200XL compact food processor*. (pictured below)
