Cork Vegfest & Snickers Recipe

What a weekend this past one has been. I'm so honored to have had the opportunity to demonstrate one of my recipes at Cork Vegfest this year. Such a positive event, I am so grateful to the organisers for bringing this to life in Cork. What an amazing way to bring the community together, support local businesses, educate about veganism, connect people with their local animal rights activism organisations and not to mention inspire lots of great open-minded people to make the life-changing decision to become vegan.

I especially want to shout out the organisers for inviting me to Dublin VegFest last year. This experience quite literally changed my life. Living in a rural part of Ireland, it's needless to say that there aren't many vegans living in the nearby vicinity! And although I love connecting with inspirational people from all over the world through social media, I was beginning to think that my partner and I were somewhat isolated in this part of the world. Attending the event really opened my eyes as to how fast this movement is growing, not just internationally, but here, in Ireland! I would highly recommend anyone to attend their local VegFest events, if you've never been I promise you, it's an incredible experience!

Along with being surrounded by amazing food and positive vibes, my favourite thing about these events is being able to connect with like minded people. Thank you to everyone who came to watch the demo. It was so great to see your friendly faces and chat to you about recipe development, veganism and life in general!

Vegan Snickers Recipe
The snickers recipe that I created at the fest went down an absolute treat. This recipe is a firm favourite of family and friend. After trying quite a few snickers inspired recipes, (Ahem, by a few I mean LOTS!) this one is definitely closest to the original.
A chewy nougatt-y base topped with salted peanut caramel, roasted peanuts and a generous coating of creamy vegan mylk chocolate. What's not to love?
These bars keep really well stored in an airtight container both in the fridge and freezer, but no word of a lie, I doubt that they will last a couple of days (they definitely don't in my house anyway!).
