Tempted by a little white chocolate?

What if I told you that you could now make your very own white chocolate at home from scratch with very little effort? Uhmmmm.... yeah go on, I'm listening...
Let's be honest, it's taken me quite a while to come up with the perfect vegan white chocolate recipe, but alas, I have found one that I truly believe you will love!
The secret ingredient? Besides the obvious one, raw cacao butter, I used raw coconut! Have you tasted it before? You can very easily make your own raw coconut from scratch at home.. All you need is raw coconut flakes, a food processor and a little bit of patience! In this instance, I opted for a shop bought jarred raw coconut as I just found it handy to have to hand with all this raw chocolate testing and what not lately.
I used maple syrup to sweeten the chocolate. You could also use a natural sweetener such as Erythritol or Steviol Glycosides. Bear in mind that unless the sweetener you use is powdered, you will have little 'sweetener' crystals in the finished product. It that's not your thing, perhaps whizz the sweetener in your nutri-bullet or food processor first.
I also added vanilla bean powder to the chocolate to give it an extra kick of yumminess. This is totally optional though, as the vanilla extract on it's own works just fine. If you don't have vanilla powder, you can just grind up some dried vanilla pods in your blender until turn into powder, simple!
Best thing about this recipe (besides the taste) is you can do so much with it! You can use any mould shape that tickles your fancy. I even used some heart shaped moulds which were originally meant for making ice-cream (affiliate link below). You can also add any different toppings that you like, dried fruit, fruit powders, crushed nuts etc. And the most exciting part about this recipe for this time of year, you guessed it, vegan white chocolate Easter eggs!

RECIPE
Vegan White Chocolate
INGREDIENTS
– ½ cup cacao butter
– 2 tbsp cashew butter
– 3.5 tbsp raw coconut butter or creamed coconut ~ I used tiana raw coconut goodness (product link above), it gives a lovely flavour to the chocolate. It's the dried flesh of the coconut blended into a paste. If you can't get your hands on this, you could substitute in coconut butter)
– 2 tbsp maple syrup
– 1 tsp vanilla extract
– ¼ tsp pink Himalayan salt
– ¼ tsp vanilla powder (optional)
Garnish (optional)
Dried berry powder, ground pistachio, raspberry pieces
PREPARATION
1. Melt the cacao butter and raw coconut over a double water boiler.
2. Place all the ingredients in a bowl and whisk until smooth.
3. Transfer the chocolate to a silicone mould.
4. Place in the freezer to set for an hour.
5. Remove the chocolate from the moulds and decorate with dried berry powder, ground pistachio and raspberry pieces.
5. This chocolate will store well in the fridge in an airtight container.
