No-Bake Peanut Butter Chocolate Cupcakes

Who doesn't love chocolate and peanut butter?

To me, it's definitely one of the most indulgent combinations. These cupcakes are luxuriously rich yet really easy to make. They consist of several layers including a rich brownie base, smooth peanut butter, creamy chocolate filling and chocolate coconut cream frosting. If you are a fan of Reese's peanut butter cups I think you'll love these.


I decided to set them in the fridge instead of using the freezer and the texture turned out ultra creamy. Sure, they take a little longer to set but the end result is totally worth it. Plus, you don't have to wait for them to defrost before you serve them which helps for impatient hands! I find it best to prepare them the evening/day before I plan to serve them so that on the day, all you have to do is assemble them, the most fun part besides of course eating them :)

If by any chance you don't like peanuts or have a peanut allergy fear not, you could easily substitute the peanut butter with another nut butter such as almond or cashew.

As well as being no-bake, these cupcakes are of course vegan, gluten free and refined sugar free. Indulgent guilt free pleasures, what's not to love?!
