Nutella Brownies
I've been relentlessley experimenting in search of the best vegan brownie for some months now. I mean, who doesn't love a good brownie right? Same goes for some nutella I would imagine? I can't tell you how excited I was when I took my first bite out of one of these brownies. I have always wanted to recreate that true 'Nutella' taste that so many of us loved in our childhoods. But this version doesn't contain any nasty additives or dairy so you can enjoy them without any guilt! Each mouthfull is an indugent, fudgey, goo-ey piece of chocolate heaven...
This is of course a no-bake recipe, although I didn't strictly 'raw' ingredients (I used roasted hazelnut butter and coconut palm sugar), these can easliy be swapped out for coconut nectar and raw hazelnut butter, so can be enjoy by raw foodists too! They are also gluten free, which is good news for you if that's your thing! (because we already know chocolate is your thing, that's why you landed on this page)

Recipe
Makes 6-8 brownies
Ingredients:
Brownie: - 200g pecans - 5 Medjoul dates - 1 cup raw cacao powder - 1 tsp vanilla extract - 2 heaped tbsp hazelnut butter - 1/4 tsp salt
Nutella Ganache: - 1/2 cup coconut palm sugar - 1/4 cup cacao powder - 1 tbsp hazelnut butter - 4 tsp coconut milk or other plant

- 4 tbsp coconut oil (melted) milk - 1/2 tsp vanilla extract
Method: - In a high speed food processor, blend the pecans until ground. - Add the remaining ingredients and continue to blend until they form a dough. - Place the dough between 2 sheets of parchment paper and use a rolling pin to roll them out to approximately an 8 inch X 5 inch slab. - Place the brownie dough in the fridge. - For the ganache, add all ingredients to your food processor and blend until smooth and creamy. If the mixtue is too think add 1 or 2 tbsp more of the coconut milk. - Cover the brownies with the Hazelnut ganache and cut to size using a sharp knife. - These brownies can be stored in a airtight container in your fridge for up to a week, but I promise y ou, they will not last that long!!
